
The Best White Chicken Chili.

So I accidentally made the absolute BEST chili last week. literally. The best.
I woke up knowing I wanted white chicken chili for dinner, but never in a million years did I expect it to be this damn good! My favorite kitchen gadget is literally my crock pot. My days are full and there are never enough hours, so being able to throw a meal in there first thing, leave it all day, and come back to a house smelling like heaven and a hot meal...

Thing.

And of course, I made a huge crockpot full and threw the extra in the freezer for those “god I’m exhausted and really don’t want to cook” days.
So, here goes... I hope I remember everything 😬

4 frozen chicken breasts
2 cans white Northern beans, drained and rinsed
1 can corn, drained and rinsed
3 jalapeños, chopped
1/4 block cream cheese (or more depending on how creamy you want it)
1 can full fat coconut milk
Handful of chopped cilantro
Curry powder, to taste
Salt and pepper, to taste
Cook on low for 8 hours (Or until Chicken is fully cooked and literally just falls apart. I took 2 forks and shredded the chicken up a bit more).
I served with sliced avocado on top, and homemade tortilla chips (slice up a few corn tortilla chips, toss in the air fryer with a little spritz of olive oil and sprinkle of sea salt. Cook for around 7 minutes (Keep an eye on them, I’ve burnt quite a few of these little guys 🤦♀️).
